President Nozawa. The 13th generation in this family of sake makers, together with pictures of his 11th and 12th generation ancestors. Records show sake production from 1601 and traditional methods are still employed. Sake production is made only through the winter season, when Oguni Town is covered deep in snow, and the environmental conditions are optimum. The water source is an essential element of our sake. Originally water was drawn from the Yokogawa River from a deep area called "Sakura Guchi", named after the cherry blossom on the riverside. For the last 100 years, water has been sourced from one of four wells, judged to provide the best water at the time it is drawn.
